Something about this time of year always makes me want to change how we’re eating.
Not in a big, overwhelming way.
I’m just not craving the heavy meals we leaned on all winter.
But at the same time… I still need dinners that work for real life.
I don’t have time for complicated recipes, and I definitely need something I can throw in the oven and know my family will eat.
That’s where this turkey and spinach taquito recipe has been coming in lately.
The boys love it.

Why this has been on repeat
This is one of those meals that just fits this season.
It’s lighter than what we’ve been eating, but it still fills everyone up.
It’s high in protein, high in fiber, and it doesn’t leave you feeling weighed down.
And maybe my favorite part—it’s easy.
If I have something that’s simple and everyone will eat, it’s going back on the menu.
What I use (and how I lighten it up)
I’m not doing anything complicated here—just a few simple choices that make a difference.
Ground turkey (this is a big one for me)
I always try to grab 98–99% fat-free ground turkey when it’s on sale and stock up.
That’s my preference because I’m pretty mindful of calories day to day, and it’s an easy way to keep things lighter without changing the meal itself.
If that’s not available, 93% works great too and is more affordable.
Cheese swap
Instead of mascarpone, I use Neufchâtel cheese and mix in about a tablespoon of lemon juice.
It gives you that same creamy texture and flavor, but a little lighter.
Tortillas
I use whole wheat carb balance tortillas when I don’t have sourdough tortillas ready.

Why I keep coming back to this
This is one of those meals that hits that middle ground I’m always looking for.
It feels lighter for spring.
It’s still warm and satisfying.
And it doesn’t take a ton of time or energy to make happen.
Because if I’m being honest, that’s usually the deciding factor.
