As the weather starts to warm up and schedules get busier, I always find myself reaching for meals that feel a little lighter—but still keep me full and on track during the day.
I’m not looking for complicated recipes this time of year. I just need a couple of go-to options that make life easier.
Here are two things I’ve been making on repeat lately.
Greek Gyro Bowls (My Go-To Lunch)
This has quickly become one of my favorite lunches, especially during busy weeks.
I’ll prep everything ahead of time—usually at the beginning of the week—so I don’t have to think about it later.
What I use:
- Cooked chicken breast
- Zucchini, tomatoes, red onion
- Tzatziki sauce
It’s simple, but it works.
If I’m at home, I’ll keep it all separated until I’m ready to eat. If I need to take it with me, I’ll pack the chicken separately so I can heat it up and keep everything else fresh.
You can also add pita if you want to turn it into more of a sandwich or dip. I make mine using sourdough and it’s so tasty!

It’s light, filling, and doesn’t slow me down for the rest of the day.

Banana Oat Bars (Easy Snack Win)
I made these recently, and they immediately earned a spot in our regular rotation.
They’re much easier than making banana bread, and I love that I can cut them up and wrap them individually for quick snacks.
They’ve been great for:
- School snacks
- After-school hunger
- Quick grab-and-go moments
And bonus—they actually keep my kids full longer than most snacks.
