Summer is one of my favorite seasons, but cooking dinner in a hot kitchen isn’t exactly at the top of my list. ๐Ÿฅต

Between kids being home, evening activities, vacations, and the general chaos of summer, I want meals that are simple, filling, and don’t require me to stand over the stove all evening.

During the summer we use our grill, air fryer, and toaster oven a lot. They help keep the kitchen from getting warmer and make dinner feel a little less overwhelming.

These are a few of our go-to summer meals when I want to keep things easy.

Grilled Chicken Caesar Salad

This is what we had for dinner last night.

I marinated chicken, threw it on the grill, made a big Caesar salad with some homemade sourdough croutons.

It felt light, everyone ate it, and cleanup was easy.

Bonus: the kitchen stayed cool. ๐Ÿ™Œ

Chicken or Steak Kebabs

These take a little prep work, but once everything is assembled, the grill does the heavy lifting.

Add peppers, onions, zucchini, or whatever vegetables your family likes. We even throw on some pineapples when we have them! ๐Ÿ˜‹ We like to make homemade fries for the side.

Taco Night

Tacos are a regular rotation in our house because everyone can customize their own plate.

Use grilled chicken, shredded beef, ground turkey, or whatever protein you have on hand.

Set out the toppings and let everyone build their own dinner.

Air Fryer Nights

The air fryer gets a lot of use during the summer.

One of my favorite tricks is throwing frozen chicken wings straight into the air fryer. No thawing required, and they come out crispy every time. Pair them with fresh fruit or a simple salad and dinner is done.

You can make basically anything in the air fryer, although ours is for potatoes 95% of the time. ๐Ÿ˜‚

Hot Dogs and Bratwurst on the Grill

Some nights dinner doesn’t need to be complicated.

Hot dogs and bratwurst are easy to keep on hand and take just minutes on the grill. Add chips, fruit, baked beans, or a simple side salad and you’ve got a meal everyone will eat.

Summer meals don’t always need to be Pinterest-worthy.

Rotisserie Chicken Shortcuts

Some nights convenience wins.

Grab a rotisserie chicken and use it for sandwiches, wraps, salads, tacos, or grain bowls.

It’s one of the easiest ways to get dinner on the table without much effort.

Breakfast for Dinner

My kids never complain about breakfast for dinner.

Eggs, pancakes, fruit, and bacon make an easy meal when I’m low on energy or inspiration.

Sandwiches and Fresh Fruit

Not every dinner needs to be complicated.

On especially busy summer days, sandwiches, cut-up fruit, veggies, and chips can be enough.

Sometimes we’ll do a snack-style dinner with whatever we already have in the fridge.

Simple still counts.

Keep Summer Meals Simple

One thing I’ve learned over the years is that dinner doesn’t need to be fancy to be successful.

Summer is busy enough without putting pressure on yourself to make a gourmet dinner every night. If the kids are fed, you’re not sweating over the stove, and everyone gets to spend a little more time outside, I’d call that a win.

During the summer, I focus on meals that are easy to prepare, easy to clean up, and easy for my family to enjoy together.

Sometimes the best summer dinner is simply the one that gets everyone fed without heating up the whole house.
